The yummiest fruit muffin in the world !!!
Hmm ... maybe not the cutest but surely one very delicious, at least in my opinion. But Hey, I got your attention right? Anyway, I write about this subject and I'm thinking what is the real difference between "cupcake" and "muffin". Both are terms used in English, but we also use them in French. I have always used the term "muffin" but frankly, I cannot tell the difference between the two.
I found this recipe on Google but I am unable to find the source, so if one day I get my hands on, I'll give the credit to that person.
I love this recipe, I'm sure you have all the ingredients in your kitchen as you read this blog. You can easily replace the yogurt with something else; that's the beauty of this recipe. I tried it with applesauce and it was a success !!!
Mix all these 4 ingredients in medium bowl ①
- 1¾ cup of flour
- 1½ tsp baking powder
- ½ tsp baking soda
- ½ tsp of salt
Mix together these 5 ingredients in a large bowl ②
- ⅓ cup of vegetable oil
- ¾ cup of sugar
- 1 egg
- ¾ cup of yogurt *
- 1½ tsp of vanilla
*Can be replaced by two small containers of 100g yogurt or 2 small containers of 100g applesauce or ¾ cup jam of your choice.
Add the dry mixture ① in the second ②.
When both are well mixed, gently add the fruits to avoid crushing them:
- 1¾ cup of blueberries (fresh or frozen)
- 1¾ cup of raspberries (fresh or frozen)
- 1¾ cup of diced apple
- A mixture of three if you feel like it.
Bake 350 degrees Fahrenheit for 25 minutes (12 muffins pan)
Bake 350 degrees Fahrenheit for 18 minutes (24 mini muffins pan)
Makes about 12 medium size muffins.
Makes about 24 mini size muffins.
